
Barley Croquettes

Ingredients for 4 portions
- Pearl Barley or a similar whole grain 320 g
- Potatoes 150 g
- Onion 1
- Eggs 4
- Garlic 2 cloves
- Cumin to taste
- Coriander to taste
- Parsley to taste
- Sesame seeds to taste
- White pepper to taste
- Salt to taste
Preparation
Boil the potatoes in their skins, leave them to cool, peel them and mash them with a potato masher. In the meantime, boil the barley in lightly salted boiling water, following the packet instructions.
When the barley is cool add it to the potatoes in a bowl, adding the eggs and chopped coriander, parsley, garlic, onion.
Mix together well, shape into balls with your hands and flatten them slightly.
Roll the balls in the sesame seeds.
Cook in a pre-heated oven at 200°C for around 20 minutes until they are a golden colour.
