Ingredients for 4 portions
- Whole wheat pita bread 400 g
- Halloumi cheese 200 g
- Greek yogurt 50 g
- Lettuce 100 g
- Peppers 400 g
- Zucchini 300 g
- Fresh mint 30 g
- Fresh chives 30 g
- Garlic 10 g
- Olive oil 40 g
- Black pepper 4 g
Preparation
Wash all the vegetables and cut them into strips, wash the lettuce, dry the leaves and set them aside.
In a large frying pan heat 30 g of extra virgin olive oil and garlic cut in half.
Begin cooking the peppers, roasting them well and seasoning with salt and pepper.
When they are halfway cooked, add the zucchini and sauté the vegetables, adjusting the salt and pepper, then keep them aside warm.
n a bowl mix Greek yogurt with a littlewater.
Finely chop the herbs and add them to the yogurt, season with the remaining extra virgin olive oil, salt and a generous grinding of pepper.
Heat a nonstick skillet, grill the halloumi cheese on both sides without adding fat, cut it into even slices, and set aside.
Toast the pita, then start garnishing it with the lettuce, then add the vegetables and grilled halloumi.
Finish with a generous spoonful of Greek yogurt sauce.
