
A cake made from a fruit which is a good source of fibre and vitamin C.
Ingredients for 4 portions
- Sugar 250 g
- Flour 300 g
- Egg 1
- Juice of 2 oranges
- Oil (or creamy yoghurt) 40 g (125 g)
- Salt to taste
- Vanilla extract 1 teaspoon
- Baking powder 1 teaspoon
Preparation
Whisk the sugar and eggs in a bowl.
Add the other ingredients and mix into a cream.
If too runny, add a bit of flour.
Pour the mixture into a well-greased and floured circular tin.
Bake at 160° C in the middle of a pre-heated oven for around 30 minutes until done.
