The unique combination of extra virgin olive oil and in-season berries makes this an interesting recipe to try out.

Ingredients for 4 portions

  • Pearled spelt (or another whole grain e.g., pearl barley) 320 g
  • Fresh cheese 200 g
  • Blackberries 120 g
  • Good quality black olives to taste
  • Extra virgin olive oil 4 tbsp
  • Oregano to taste
  • Salt to taste

Preparation

1.

Dice the cheese, dress it with extra virgin olive oil and (preferably fresh) oregano and leave it to absorb the flavors.

2.

Rinse the blackberries and dry them carefully.

3.

In the meantime, boil the spelt in salted water (according to the packet instructions), drain and rinse it quickly in cold running water.

4.

Put the spelt in a bowl and dress it with a drizzle of extra virgin olive oil.

5.

Once it has cooled mix the cheese, blackberries and olives together carefully.
